6 Paleo Freezer Meals

Welcome spring! Your lives just got busier if you have a family because sports season is just beginning. You are busy running those little ones from school to practice and games. You’ve got homework to help with and not to mention your own errands to run. Take some stress off of your busy schedule and make these freezer meals to prepare for your busy season.

I’ve made it easy for you to stick to your Paleo lifestyle with a shopping guide and easy to follow instructions. The good news is… you can make it all in under 2 hours and they can freeze for up to 3 months!

Simple Paleo Burgers

Ingredients: 

  • 1 Lb. Ground Venison (or ground meat)
  • 1 Egg
  • 1 Tbsp. Sea Salt
  • 1/4 tsp. Black Pepper
  • 1/2 tsp. Garlic Powder

Process: 

  1. Combine all the ingredients in a bowl and mix well.
  2. Form meat into patties and place on a tray. (Sliders work well too)
  3. Place tray in the freezer for 30 minutes and then place wrap them in tinfoil and place them in a freezer bag.

Prep: When you are ready to cook the burgers, place them frozen on a grill or let them thaw and cook them for 10 minutes in a frying pan. (cook until your likeness- rare, medium rare etc.) Add Lettuce, tomato and your desired toppings for a delicious burger night!

 

Paleo Meatballs

Ingredients: 

  • 1 lb. Ground Venison (or ground meat)
  • 1 Egg
  • 1/2 tsp. Parsley
  • 1 tsp. Sea Salt
  • 1/4 tsp. Black Pepper
  • 1/4 tsp. Garlic
  • 3 Cups Organic Pasta Sauce

Process: 

  1. Combine all the ingredients (except pasta sauce) in a bowl and mix well.
  2. For meat into meatballs (your desired size- I use 1 Tbsp. Scoop)
  3. Place meatballs on a tray and place in the freezer for 30 minutes.
  4. Place meatballs and pasta sauce in a freezer bag.

Prep: When you are ready to cook the meatballs, place them frozen in a saucepan on medium heat. Bring to a low simmer and cover the pan. Cook for 20 minutes on medium heat or until meatballs are cooked through. (Add extra pasta sauce if desired) I like to serve mine with Spaghetti squash or Zoodles

 

Apple – Sweet Venison Roast

Ingredients

  • 2-3 lb. Venison Roast (or any roast meat)
  • 1 diced Sweet Potato
  • 1 diced Apple
  • 2 Tbsp. Apple Cider Vinegar
  • 1 Tbsp. Sea Salt
  • 1/4 tsp. Black Pepper
  • 1 Tbsp. Olive Oil
  • 2 Tbsp. Honey or Maple Syrup

Process:

  1. Dice Apple and Sweet Potatoes and place them in a bowl.
  2. Pour ACV, Olive Oil, Honey and Salt & Pepper, mix well.
  3. Place Roast and the rest of the ingredients in a freezer bag.

Prep: When you are ready to cook, empty the bag into a crock- pot and add 4 C. Water. Cook on low for 4-6 hours. Venison roast should fall apart and produce should be soft. Stir and serve warm, add Salt and Pepper to taste.

 

Crock- Pot Chicken Soup

Ingredients: 

  • 4 Chicken Breasts
  • 1 Shallot
  • 1 Parsnip
  • 2 Celery stalks
  • 1 c. Carrots
  • 1 c. Kale
  • 1 c. Green Beans
  • 2 c. Chicken Broth
  • 2 tsp. Sea Salt
  • 1/4 tsp. Black Pepper
  • 1/2 tsp. Garlic powder

Process: 

  1. Dice all your vegetables to bite size pieces and place in a bowl.
  2. Add broth, salt, pepper and garlic to the vegetables, stir gently.
  3. Place vegetables and chicken in a ziplock bag and freeze.

Prep: When you are ready to serve, pour entire contents of the bag into a crock- pot. Add 6 cups of water and cook on low for 6-8 hours. Shred chicken and stir. Serve hot!

 

Hawaiian BBQ Chicken

Ingredients: 

  • 4 Chicken Breasts
  • 2 c. Chicken Broth
  • 3 C. Pineapple
  • 1/4 tsp. Cumin
  • 1/4 tsp. Cayenne
  • 1/4 tsp. Chili Powder
  • 1/8 tsp Sea Salt and Pepper
  • 1 Tbsp. Apple Cider Vinegar
  • 2 Tbsp. Honey

Process:

  1. Dice Pineapple and place it in a bowl.
  2. Add spices, honey, ACV and Chicken Broth in a bowl and stir.
  3. Combine all the ingredients in a freezer bag and freeze

Prep: When you are ready to serve, place entire contents of the bag into the crock- pot and add 2 cups of water. Cook on low for 4-6 hours. Serve warm by itself or in a lettuce wrap.

 

Italian Chicken

Ingredients:

  • 4 Chicken Breasts
  • 32 oz. jar Organic Pasta Sauce
  • 12 oz. Organic Diced Tomato
  • 1/2 tsp. Parsley
  • 1/2 tsp. Cilantro
  • 1/2 tsp. Rosemary
  • 1 tsp. Sea Salt
  • 1/4 tsp. Black Pepper
  • 1 tsp. Garlic powder

Process:

  1. Combine all ingredients in a freezer bag and freeze. (I add chicken last)

Prep: When you are ready to serve, place entire contents of the bag and 2 c. Water in a crock- pot and cook on low for 6 – 8 hours. Shred Chicken and stir gently. Serve hot by itself or with Spaghetti Squash or Zoodles and a side salad.

*When storing these meals, remember to get all of the air out of the bags to prevent freezer burn*
